“Lucinda Puac Pérez inherited her home and farm from her grandmother in Sololá, Guatemala. Her organic, 100% Bourbon variety farm grows wild, heavily shaded with banana and avocado. During harvest, after de-pulping, Lucinda dry ferments the cherries for 12-24 hours, washes, and dries them on her patio. Small Planes has purchased from Lucinda since 2021, sourced in partnership with Huckleberry Coffee Roasters.”
