“Named for producer Wilfran Trujillo's farm in Antioquia, Colombia, Las Palomas is a Chiroso selection made possible by several generations of coffee growing. Wilfran moved to the farm in 2013 and began planting trees in partnership with his father; Las Palomas now holds roughly 1,500 producing Chiroso trees with plans for 5,000 more. Grown at 2,000 masl, washed and lightly roasted, the variety sits somewhere between Pink Bourbon and Gesha in the cup.”
