“Tres Dragones comes from Granja La Esperanza, one of Colombia's most progressive and experimental farms, where varieties are chosen for their flavour attributes against a set of 95 quality hurdles. The estate works out of Trujillo and Caicedonia in Valle del Cauca, on the western slopes of the Central and Western Andes, where volcanic ash-derived soils, cloud cover at altitude and cool nights slow cherry maturation so the beans build denser sugars. This lot is the Colombia variety, processed natural.”
