We are starry-eyed for this Papayo variety microlot from María Belén Díaz of Finca Resinas. Originating in Colombia's Huila region, Papayo is a rare and coveted Arabica variety distinguished by its elongated cherries and seeds that look kinda like itty bitty papayas. Its vibrant, tropical fruit-forward cup profile has made it a favorite among specialty coffee enthusiasts and competition roasters alike. This lot's candy-sweet flavor profile opens with a floral honey base, lifts into bright strawberry candy notes, and finishes with the playful sweetness of white gummy bears / candied pineapple.
