Highlights
“La Salvaje, The Wild in Spanish, is Fabio Caballero Jr.’s farm in La Paz, Honduras, and the 2025 Cup of Excellence winner. At 1,870 masl it is a sprawling forest of native shade trees and the highest-grown coffee Shoebox has tasted from Honduras. Cherries are picked at peak ripeness, immediately depulped and bulk dry fermented for 48 hours, then fully washed and slow dried on raised, shaded beds for 25 to 30 days. In the cup it opens with punchy Meyer lemon acidity and bright berry tones, opening into apple blossom, lemon verbena, jasmine and bergamot as it cools, with acai and bergamot in the finish. Sourced via Cima Cafe. Limited to 2 bags per person.”
