“The Halo Beriti washing station in Yirgacheffe, Ethiopia was established in 2014 and serves more than 750 local smallholder producers delivering cherry through the harvest season. This microlot, sourced through Cafe Imports, was specially prepared with multiple extra sorting steps between cherry delivery and drying. Shoebox notes this year's harvest landed louder and more acid-forward than last year's softer, creamier peach ice cream profile - a sign they have hit their stride on the BC25 roaster after scaling from 1 kg to 4 kg batches.”
