“Gladys Aullon runs her family farm in Verda El Tauso, Arboleda, Nariño, together with her husband Misael. She cultivates Caturra on 1.5 hectares of volcanic soil enriched by the Galeras volcano. The Reposado Washed process involves picking only fully ripe cherries, floating to sort, resting on mats for 30 hours, pulping, another 30-hour mat rest, two washes, and then open-air drying on mats for 18 to 20 days.”
