“Reshad took over his family's farm from his father 20 years ago, replanting the farm with newer varietals such as the 74110 in this lot. These newer varietals are more resistant to coffee berry disease and produce many different flavour profiles. Reshad focuses on quality with the goal of earning more money to support his family and the surrounding community. Processing on the farm is done primarily by hand. After the cherries are picked and sorted, the outer husk is removed while a very thin layer of mucilage remains on the seed. The coffee is then dried without washing to preserve the natural sweetness that comes from the mucilage of the cherry.”
