“Hanan produced this coffee alongside her mother, Asha, and approximately 150 outgrower partners and team members in Buku. Hanan founded ASHKIM, an Ethiopian exporting company, in 2020. She named the company after Asha and her sister, Kimiya. Today, they continue to operate the business as a family in Guji. Hanan is also a member of the Ethiopia Chapter of International Women's Coffee Alliance. The cherries are grown and produced by Hanan and her team of outgrowers. The fruit then ferments with the seeds still inside, taking on a raisin-like appearance as natural reactions increase their flavour potential. Once the cherries have reached 10-12% moisture content, the fruit is removed and the seeds are exported. The coffee is sorted for density and dried on traditional raised beds.”
