“The Mwirua Farmers' Cooperative Society was established in 1954 and manages several affiliated coffee factories in Kirinyaga, representing thousands of smallholder farmers. A disc pulping machine removes the skin and pulp from freshly harvested cherries, which are then separated by density into three grades. The selected coffees undergo a traditional 6-8 hour fermentation, are thoroughly washed and soaked for a further 16-18 hours in fresh water, then sun dried for 8-14 days on raised beds.”
