“Coffees from the Inga community in Aponte, in northern Nariño, have built a distinct regional style: very high altitudes (2,100 MASL and above) suit honey processing, and the town has specialised in it. Cherries are selectively harvested and sorted before depulping with the mucilage left intact; the parchment then dries with the fruit layer attached on stacked raised-bed solar dryers at each producer's finca, and the field blend is amalgamated at milling. Crop 25/26, imported by Ally, and run by Scenery as house filter and as a secondary Facility component.”
