“The farm Villa Pastora was founded in the 1980s by Pastora Anacona in Palestina, Huila, Colombia. Generations of producers have worked on this farm, handing down knowledge and sharing their passion throughout the decades. Today, Villa Pastora is led by Yulieth Mora, who helped transform it from a farm to a community hub, supporting locals through job opportunities, post-harvest advice, and infrastructure support for neighboring producers. The farm always employs sustainable farming methods while focusing on quality. This lot of Ombligon was processed with a strain of Saccharomyces cerevisiae yeast to ensure longer mucilage fermentation, then dried on patios for 15 days.”
