“Sango's 5th anniversary coffee, from Gedeb, Yirgacheffe. Processed at the Danche station run by SNAP, established in Addis Ababa in 2008 by entrepreneur Negusse. This lot brings together cherries from 810 smallholder producers. The hydro honey process dries cherries for 48 hours on shaded beds, washes them, then ferments in barrels smoked with olive tree trunks and honey scum, adding a subtle smoky-sweet complexity to the classic Yirgacheffe profile.”
