“The Bochessa kabele is an agricultural community in the mountains of Sidama, Ethiopia, where coffee is the primary cash crop and enset - false banana - grows as both shade and staple food. Its washing station was built in 2022 on 1.5 hectares, and 823 smallholders now deliver cherry there, cultivating parcels of up to two hectares, some barely a tenth of that. This lot is dried in the whole fruit: cherry is sorted and washed at the station, then laid on raised beds for 21 to 27 days. The long dry is deliberate, keeping fermentation controlled while the intact fruit builds body and sweetness. The result reads jammy berry and orange marmalade with pineapple lift, plus strawberry, buckwheat honey, dried cranberry and hibiscus. Ruby roasts few naturals; this is the one they picked.”
