“German Ortiz is a founding member and treasurer of the producer group Los Guácharos in Bruselas, Colombia, a quality-focused group moving toward organic farming. They make their own fertilizers and fungicides, including Super Magro, a compost tea made from minerals, manure, and local microbes. This particular lot contains both pink bourbon and ombligon, a variety of ambiguous genetics. Although the lot sees extended fermentation — 24 hours in cherry and 36-48 hours depulped in sealed containers — the cup stays very clean: jammy with nice acidity, raspberry jam, pomegranate, plum, and nectarine, plus a subtle rose and honey-like floral quality.”
