“Aquiares Estate sits on the fertile slopes of Costa Rica's Turrialba Volcano and is one of the country's most progressive, carbon-neutral coffee farms, balancing production with environmental research and community investment. Led by Diego Robelo, who continues his family's legacy while driving innovation in processing and varietal selection, the estate grows Marsellesa and Red Obatá for Entre Ríos, meaning 'between rivers'. This washed lot is mechanically pulped, briefly fermented, and dried in a Guardiola dryer for around 32 hours, producing a rounded body, chocolate sweetness, and a clean finish.”
