“Sourced from the Chelbessa washing station in Gedeb woreda, Gedeo Zone, this washed lot is produced by a network of smallholder farmers growing indigenous Ethiopian heirloom varieties. High elevations, volcanic soils, and extended cherry maturation create exceptional clarity and pronounced acidity. Cherries are hand-selected at peak ripeness, fermented under controlled conditions, and dried on raised African beds for 10-14 days.”
