Highlights
“Rio Blanco comes from Veracruz, the Gulf-coast state where coffee has grown since the eighteenth century and where most Mexican lots still move through smallholder cooperatives. The decaffeination is the sugarcane route: ethyl acetate derived from molasses binds to caffeine in the moistened green coffee, then steam clears the solvent while leaving the sugars and acids that carry flavour intact. Rising Star Coffee Roasters, founded in Cleveland in 2012 by former Lockheed Martin engineer Kim Jenkins, roasts it for maple, paprika and graham cracker, and sells it whole bean or ground to order for the grind you actually brew with.”
