“This lot comes from Right Side's direct-trade work in Ethiopia, the birthplace of coffee. Shemzu Abajiru farms in the Jimma region at 2,000 metres, where traditional smallholder practices let the trees grow semi-wild and organic. The JARC varieties here descend from a local Ethiopian landrace developed in the 1970s at the Jimma Agricultural Research Centre, selected from a single mother tree in Bishari village. Cherries are picked by hand and laid on African beds, where only fully ripe fruit continues on; the coffee dries for roughly 20 days with the beds shaded during the hottest hours until it reaches the target moisture level. Roasted to order in Spain and shipped within days of the roast date. Notes of plum, pear and toffee.”
