“Luis Alberto Balladarez farms La Peña in Nueva Segovia, the northern Nicaraguan department that has supplied most of the country's competition coffees, and Right Side Coffee has worked with him on direct trade terms since 2014. This is Yellow Catuaí, a lower-yielding mutation that tends to give rounder, sweeter fruit than red Catuaí, dried in the whole cherry as a natural. Right Side lists it as a very sweet espresso with winey notes and redcurrant juice, and roasts it medium to keep that fruit intact without pushing the roast into bitterness.
