Highlights
“Marlon Rojas is a third-generation coffee farmer at Tres Cielos in Pitalito, Huila, who kept his day job as a commercial pilot while building out specialty production on the family farm. This Bourbon Ají starts with 36 hours of controlled whole-cherry fermentation, then the cherries are depulped and submerged for a second 48-hour aerobic fermentation before washing and drying. The result is a clean, layered cup of brown sugar, orange and peach with tropical passionfruit, strawberry soda and pineapple on top. Roasted by Rover Coffee Lab in Sligo, Ireland, for Right Roast's Coffee Club 2026 November Edition.”
