“Alo Coffee is Tamiru and Messi's project in Bensa, Sidama, named after Tamiru's home village; he won Ethiopia's 2021 Cup of Excellence with a natural from these highlands and has since become one of the country's most closely watched producers. Chilaka is a village lot from 2,360-2,480 metres: cherry is depulped early and dried as a white honey, with about 5% mucilage left on for 10-15 days on raised beds under moderate sun. The cup is soft and floral, with a bright zest in the finish.”
