Highlights
“Chelbesa sits in Gedeb, one of the highest and most tightly planted corners of Gedeo, where smallholders farm local landraces under shade trees and sell ripe cherry to the washing station by the day. The station sorted this lot for density and uniformity, pulped it, then ran the fermentation dry, without the water bath most washed coffees get, before a slow finish on raised beds at 2,150-2,200 m. Ephtah Specialty Coffee built the lot with the station, and Falcon Specialty imported it. Recluse Roasting, working out of Richmond, Virginia, roasts it for black tea, lemon and grape: a light, articulate washed profile rather than a fermented showpiece.”
