Medium-bodied and beautifully balanced, it is an easy coffee to come back to whether it is the first cup of the day or the third. Chiapas sits in the far south on the Guatemalan border, where high-altitude coffee grows in the volcanic soils of the Sierra Madre — and Mexico remains one of the world's largest producers of organic coffee, almost all of it grown by smallholders.”
