Highlights
“Guji's Hambela Wamena district has built a reputation for coffees that stay legible even when the processing gets ambitious. This lot comes off the Dimtu washing station, where whole ripe cherry goes into sealed, oxygen-free tanks for anaerobic fermentation before being laid out to dry in the sun. Elevation runs 2,100-2,300 m, and the heirloom varieties planted there give the cup its structure. KANYA Coffee handled quality control and traceability on the lot. Radio Roasters, the Decatur, Georgia roastery Chip Grabow started in 2014, picked it up as a limited edition and lists it against blackberry cobbler, honey and brown sugar, with the tank fermentation pushing dark fruit through the sweetness rather than flattening it.”
