“Max Salazar Micromill is a family project in Zarcero, Alajuela, founded in 2016 by Max Salazar and his cousins Cristian and Greivin. The Salazar family has been cultivating coffee in the region since the 1950s, when their grandfather Cristóbal Salazar first planted coffee. The mill processes micro and nanolots, specializing in honey and natural process coffees. La Isabela farm produces around 230 bags annually, with 20% processed at the micromill. The family focuses on quality through experimentation, slow fermentation, and varied drying methods, while working toward sustainability certifications including Bandera Azul Ecológica and NAMA Cafe.”
