“Thai coffee returns to Provecho's bar in a collaboration with Thai artist Koysun, who created the artwork and helped pack and ship every tin. The coffee comes from Yosniyom Coffee Farm in Mae Daet Noi, Thailand: a lot of Typica and Catimor processed as a natural carbonic maceration. Ripe cherries are hand-picked, sorted and float-tested before spending 64 hours fermenting in CO2-filled tanks, a technique borrowed from winemaking that encourages intracellular fermentation for a fuller body and more intense fruit. A controlled multi-stage dry follows, moving through sun-drying, a rest in bags and shade-drying, before two further months of resting develop sweetness and aftertaste ahead of hulling and hand sorting. In the cup it reads grape, peach and blackberry.”
