“Santa Felisa Estate has been farmed by the Meneses family since 1904, with siblings Anabella and Antonio now leading it in Guatemala's Acatenango Valley. Cherries are handpicked at peak ripeness and given a lactic natural fermentation, a controlled rest that softens acidity and builds a rounder, creamier body, before drying slowly on raised beds. The lot is Red Pacamara, the large-bean Pacas and Maragogipe hybrid bred in El Salvador, whose bold cup gains extra sweetness and roundness from the lactic process.”
