Highlights
“A surprise restock of a coffee Promethium first fell for during its own cupping table: a washed Gesha grown by a collective of 17 smallholder families working 1-2 hectare plots across Pitalito, Palestina, Acevedo and Timana in Huila, Colombia. Cherries are hand-picked at peak ripeness, de-pulped straight away, fermented in cement tanks for up to forty hours, given a double wash, then dried slowly for twelve to twenty days inside parabolic greenhouses instead of the usual ten. The extended, sheltered dry keeps the citrus and florals of a high-scoring Gesha intact while building the cereal-sweet character that gives the lot its name.”
