“In the northern highlands of Peru, where the mountains of Cajamarca and Amazonas meet, Café Selva Norte was created in 2018 as the first venture of the Urapi Fund. Working closely with ten cooperatives and more than three thousand producers, the project restores ecosystems through farm renovation and agroforestry. The Farm School produces over a million coffee seedlings annually while training farmers in sustainable practices. Each lot is selectively harvested and carefully washed: cherries are pulped within 24 hours, fermented for 12–48 hours, washed clean, and dried on raised beds to 10–12 percent moisture.”
