“Joicafe is run by Wendy Alvarado and her two sisters in Vista de Rivas, a town at the base of Costa Rica's tallest peak, Chirripo. Their family took the risk of growing specialty coffee in the Brunca region, an area previously known for cattle and tomatoes. The Bambu lot—named for bamboo shoots along a creek—was one of their first plantings. Ripe cherries are floated, rested for 50 hours, then spread thin and dried under greenhouse cover for 20–25 days. Nearby relatives provide dry milling with screen sorting, density sorting, and electronic color sorting.”
