Highlights
“Finca Covadonga lies in San Juan del Obispo, in the Antigua region of Sacatepéquez, between 1,600 and 1,660 masl under the volcanoes Agua, Fuego and Acatenango. Guillermo Sánchez is the fifth generation of the Sánchez family to farm coffee here, on mineral-rich volcanic soils with warm days, cool nights and a well-defined dry season that ripen cherry slowly. Cherries travel a short distance to Beneficio La Esperanza, where the coffee is pulped and ferments for about 36 hours before the parchment is washed and laid on patios for three to four days of sun drying. It is then graded by size, density and colour at the dry mill. Presta packs it as a 10 oz bag with notes of cocoa powder, fig, honey and white sugar.”
