“Sourced from the Koke and Birbes Kela washing stations in Yirgacheffe's Gedeo Zone, this lot represents the work of approximately 1200 smallholder farmers from five kebeles. The Koke washing station, built in 2011, has refined quality through producer guidance since 2015, while the Birbes Kela station—owned by Semira Negash and founded in 2020—earned a placement in Ethiopia's 2021 Cup of Excellence. Harvested cherries are fermented in-cherry for two days, pulped, and dried on raised beds to optimal humidity.”
