“Finca La Josefina sits inside the Cayambe-Coca Natural Reserve in Pichincha, Ecuador, where Ligia Merizalde and Leopoldo Andrade grow Sidra alongside Pacas, Rume Sudan, Tekisic, Pink Bourbon, Pacamara, Caturra, Gesha, and Typica. This lot was intentionally fermented anaerobically before washing, which intensifies fruit and acidity while adding body. Sidra, a cross-breed developed in Ecuador, is known for bright, sweet, fruity and light floral characteristics.”
