Daughter Hellen manages the mill and helps with farm management. This lot, La Chirascuasa, is a one-hectare farm at 1700 masl planted with Caturra and Catuai; whole cherries ferment 48-60 hours in valved tanks before drying about 25 days on raised beds.”
