Highlights
“Don Eli, the Montero family's wet mill in Los Santos, Tarrazú, Costa Rica, is named after Carlos Montero's father and was built in 2014 on the Tematica plot across the Pirris River from his home. Carlos and Jacob Montero gather the fruit, rest it in cherry overnight, then depulp through a Penagos leaving all the mucilage on the parchment for the Honey Reposado process, fermenting it darker for two or three days before 15-18 days of raised-bed drying. Grown at 1,800 masl, this Catuaí drinks as key lime pie, sweet cream honey and vanilla.”
