“Frank Rivas Torres manages his family's estate, Finca La Indonesia, in the Nariño department of Colombia. The property was handed down from his grandfather, Marco Antonio Torres, one of the first people to cultivate coffee in La Union more than 80 years ago. La Indonesia sits at 1750 meters above sea level with infrastructure for Washed, Honey, and Natural processes. For this Geisha lot, the Hydro Honey process is applied: cherries undergo flotation, ozone sanitation, and a 48-hour oxidation phase in sealed tanks before a 68-hour submerged fermentation.”
