Highlights
“Volcán Azul sits on the volcanic slopes of the Poás Volcano in Costa Rica's Central Valley, run by Alejo Castro and his family across several generations, with a modern mill on site. This lot is pure SL28, the Kenyan selection prized for its vivid acidity and layered fruit, grown here at 1,800 masl. Picking is by hand and only ripe cherries go in. They rest whole in the fruit for a full day to break down mucilage and start a short fermentation that builds mouthfeel, then are depulped and given a slow, controlled washed fermentation for clarity and sweetness before a thorough wash. Drying is slow on raised, ventilated beds to protect the structure of the cup. POMA works with the farm on ongoing processing experiments, part of a longer collaboration aimed at pushing quality further. The result is a clean, expressive coffee: bright acidity, nectarine and stone fruit, dark berries, yellow florals, honey sweetness and a creamy body.”
