Pacamara is a large-beaned cross known for fragility, and here that shows as fine orange-blossom and dried-apricot aromatics with a refined balance between floral bitterness and fruity sweetness. The coffee is cold washed, a slow, low-temperature wash that protects the delicate aromatics of the bean instead of stripping them. Best approached as a filter coffee, where the floral layer stays lifted.”
