“Finca Fatima was acquired in 1970 by Antonio Orea and Genoveva Perez-Redondo and sold as a high-quality commodity lot until 2018, when third-generation producers Givette and Ernesto took it into specialty coffee. In 2019 the farm became a Cup of Excellence winner with 89.41 points, working with Coatepec's criolla typica varieties, and it won again internationally in 2021. This honey lot was picked at optimum ripeness, pulped and classified by density, briefly immersed in water then spread on raised beds without fermentation, which yields sweet notes and a silky, full-bodied cup.”
