“Ratnagiri Estate was founded by the Patre family in 1927 and has been run by Ashok Patre since 1989, when he took over and began pushing the farm toward specialty production. Ashok produced only washed coffees until 2010; after seeing US cafes ask for higher-quality single origins he added honey processing in 2016. Hydro Honey combines elements of natural, washed and post-harvest honey processing: intact cherries dry partway on shaded raised beds, then go into water tanks for a rehydration phase before depulping. The wet parchment dries with most of its mucilage still attached inside a dehydrating chamber.”
