“MALAWO takes its name from the Sidama word for honey, and the sweetness shows in the cup. The coffee comes from Boreta, a village in the Arbegona woreda of Ethiopia's Sidama zone, where small plots sit around 2,200 masl - high enough for the country's Highland Coffee designation. Producer Daye Bensa Coffee, founded by brothers Assefa and Mulugeta Dukamo, runs the Arbegona station; cherries are floated for density, then dried 12-15 days on African raised beds with mesh nets, rotated every half hour. The cultivar is JARC 74158, a CBD-resistant selection from the Jimma Agricultural Research Centre's 1970s Metu-Bishari program. PLOT roasts it light for filter: yuzu, nectarine and Assam tea, with citrus and stone-fruit depth. Back for a third year.”
