“Los Cipreses takes its name from the cypress trees grown on a partner farm in Naranjo, in Costa Rica's West Valley. The Salazar family has farmed here for four generations, selling cherries to local cooperatives until the 2018 C-market crash pushed them toward specialty coffee. Max Salazar and his cousins now run two farms, San Cristóbal and La Isabella, plus a small mill installed in 2020 at the lowest point of the farm, around 1,680 masl. The varied terrain creates several microclimates, each needing its own approach by slope and orientation. Naranjo's Pacific weather keeps the region drier than the Central Valley, and at 1,700 masl the cherries mature slowly, generally producing more body and texture in the cup.”
