“Agricola Geisha began as Gonzalo and Yrma Palenzuela's retirement project in the hills above Boquete and took third at Best of Panama in its second year of production. Three generations work it now, shade grown under plantain and avocado in the path of the bajareque mist, with Manuel Barsallo running processing and quality across the farms. This lot: cherry selected at 15 Brix, a 36 hour cold ferment, then dried as an oxidation natural over 29 days.”
