“La Josefina Estate is a pioneering farm in Cascabel, El Chaco, Napo, Ecuador, where Picacho works directly with Leopoldo Andrade and his wife Ligia Merizalde. Rooted in rich volcanic soils continually nourished by the nearby active El Reventador volcano, the estate sits at 1,500 metres and produces award-winning lots through experimental fermentation and meticulous processing. This washed Typica Mejorado undergoes a 10-day anaerobic fermentation before depulping and washing, then dries for 15 days on African beds. Typica Mejorada, developed in Ecuador through experimental breeding, pairs heritage flavor traits with floral, Geisha-like complexity but yields low and is highly sensitive to its environment, making it difficult to cultivate. The cup is structured and fruit-forward, with silky sweetness across tart blood orange, mango and apple compote.”
