“Produced by Mohammed Hussien at Don Eli farm in Bait Alamier village, Haraz, Sana'a, Yemen. This nano lot of Ja'di and Dawairi (Ancient Typica) varieties grows at 2,100–2,250m on terraced slopes. It is the first year Mohammed has used anaerobic processing, combining Yemen's traditional heirloom profile with modern technique. Cherries are hand-harvested, fermented anaerobically, then dried on African beds for 18–24 days and rested for one month before hand sorting.”
