“Sol de la Manana - 'morning sun' - began in 2013 with about ten producers in the mountains above Caranavi and now runs almost like a school for coffee farmers, teaching nursery establishment, fertilisation, pruning and cherry sorting. The Rodriguez family, who have milled at Buena Vista for more than 30 years, saw Bolivia's output fall roughly 80% in a decade to around 1,200 tonnes a year and started sharing their knowledge to keep the origin alive; the project won the SCA Sustainability Award in 2019. This natural Caturra was dried in a repurposed Coco peanut dryer at over 40C for two to three weeks, then roasted to a medium level to keep sweetness and body while pulling out berry-like acidity.”
