“From the Kirinyaga region on the southern slopes of Mount Kenya, this lot was processed at Kiunyu Factory, a washing station with roots dating back to the 1960s. About 3,000 smallholder farmers deliver hand-sorted cherries that are pulped, fermented, washed, and dried on raised African beds over three weeks. Green coffee moisture was a low 9.5%, and the roast was developed with steady heat from the start to preserve acidity and clarity.”
