“PHIL vs SEB is Phil & Sebastian's Halloween novelty release, and the current lot comes from Rio Jorco, a third-generation family farm in the hills of Tarrazu, Costa Rica, run by producer Carlos Castro Solano. Three-quarters of the property is kept under conservation, with Catuaí trees growing among native shade. This lot is processed as white honey and dried on patios plus mechanical dryers, then stored as green coffee in frozen conditions to hold freshness. The result at 1,600 m is a candy-shelf filter cup: peanut butter cup, marshmallow and a Snickers-like finish.”
