“Urilser Oliveira and his family own La Finca La Fila, a 2-hectare farm in the Huabal district of Cajamarca. The farm is mainly planted with Catuai for its cup quality and productivity. In recent years Urilser has been experimenting with fermentation techniques using tanks and sterile bags to improve quality. This lot is fermented for 5-8 hours before being processed as a natural. While Urilser mainly produces washed coffees, his experiments with naturals and honeys are yielding increasingly impressive results.”
